Hi my name's Claire Wade, I'm 23 and have had ME (Myalgic Encephalomyelitis) or Chronic Fatigue Syndrome for 13 years.
I became severely affected when I was 16, and have been bedbound ever since, although recently my health has begun to improve.
I first developed swallowing problems after a chronic sore throat which lasted over a year. To suddenly go from being able to eat normally to only be eating yogurt or pureed fruit was really hard and I very quickly became bored with the limited range of foods I could eat.
Food stopped being a pleasure and instead became a chore. I got my brother to search the web for recipes for different meals; but the recipes were spread out over hundreds of different pages which is why I decided that when I was well enough I would put together a site of my own, a one stop recipe shop!
It's taken seven years to get to this point. Although I'm still bedbound 85% of the time I am doing a bit more from my bed. This site has taken a year to put together, while I gathered recipes and worked my way through a web design correspondence course.
I'd like to thank all the chefs who have donated recipes, none of this would have been possible without the precious time they gave up to help me. I'd also like to thank the people who left recipes on various message boards, I am really grateful!
Living with swallowing problems is extremely difficult; but just because you have problems chewing or swallowing, doesn't mean you can't enjoy the taste of good food. I hope you find something here that tempts you.
