Blåbärssoppa/Blueberry Soup

    Ingredients

  • 500ml blueberries, fresh or frozen. 500ml water 1 tbsp potato starch
  • a couple of tbsp sugar (to taste)

    Instructions

  1. Heat the water and sugar, mix in the starch diluted in a little cold water.

    When the liquid is nearly boiling, lift off heat. Take care not to let the soup boil. Lift off at first bubble, otherwise the starch will turn to glue...
  2. Add blueberries. Stir in and let cook. Chill, and enjoy!
