Carrot and Lentil Soup

    Ingredients

  • 1 tbsp oil
  • 1 onion, sliced
  • 1 lb carrots, sliced
  • 3 oz split red lentils
  • 2 pts vegetable stock
  • 1 tsp coriander
  • 3 tbsp parsley, chopped
  • salt & pepper

    Instructions

  1. Heat oil, add onion and cook until soft.

  2. Add carrots and cook for 4-5 minutes.

  3. Rinse lentils with cold water then add to pan with stock and coriander.

  4. Bring to boil, lower heat, cover & simmer gently for 30 mins or until lentils are tender.

  5. Add parsley, salt and pepper and cook for 5 mins.

  6. Set aside to cool slightly, then pour into a processor and bend until smooth, reheat before serving.
