Carrot and Lentil Soup
Vegetarian
Ingredients
- 1 tbsp oil
- 1 onion, sliced
- 1 lb carrots, sliced
- 3 oz split red lentils
- 2 pts vegetable stock
- 1 tsp coriander
- 3 tbsp parsley, chopped
- salt & pepper
Instructions

Heat oil, add onion and cook until soft.

Add carrots and cook for 4-5 minutes.

Rinse lentils with cold water then add to pan with stock and coriander.

Bring to boil, lower heat, cover & simmer gently for 30 mins or until lentils are tender.

Add parsley, salt and pepper and cook for 5 mins.
- Set aside to cool slightly, then pour into a processor and bend until smooth, reheat before serving.
