Nigella Lawson's Sunday Night Chicken Noodle Soup
I see in my notes I've called this Sunday Night Chicken Noodle Soup, and it's true I do often cook this, or a version of it, on Sunday nights. But if I do, I almost certainly have to have a rerun on Monday evening.
Serves 1
Contains Gluten, unless gluten free noodles used
Ingredients

1 tbsp sake

3 tbsp mirin

2 tbsp soy sauce

1 fat clove garlic, crushed with flat of knife

1 dried red chilli pepper

1 free range chicken breast

100g fresh noodles handful choi sum or other Oriental greens

1 tbsp oil plus few drops sesame oil

500ml chicken stock (a cube's fine)

fresh coriander
Instructions

Mix the sake, mirin, soy, garlic and chilli. Cut the chicken in strips, put in a bowl and cover in the marinade. Leave for an hour.

Cook the noodles in boiling salted water and throw in the choi sum for the last 2 minutes cooking. Drain. Heat up the stock.

Into a hot wok or frying pan pour the oils and, when they are hot, throw in the pieces of chicken and toss about till cooked.

Pour over the marinade and when it's bubbled nearly away and the chicken is glossy and dark, put the noodles in a bowl and pour the stock over them and top with the wok-bronzed chicken.

Sprinkle over some freshly chopped coriander and eat.
