Pots – au – chocolat

Serves 4

    Ingredients

  • 75 g (3oz) plain chocolate
  • 25 g (1oz) butter
  • 3 eggs – separated
  • 15 ml (1 tbsp) warm water
  • 75 ml (3 floz) fresh double cream

    Instructions

  1. Break up chocolate and put in a bowl over a saucepan of boiling water.
  2. Add butter and leave until melted, stirring occasionally.
  3. Beat in egg yolks until smooth, remove pan from heat and stir in warm water.
  4. Beat the egg whites to a stiff texture and gently fold them into the chocolate mixture.
  5. Spoon into dishes and chill. Serve.
