Coconut Pudding

One of my all time favourite easy to swallow recipes is dim sum/yum cha coconut pudding

Serves 4

    Ingredients

  • 2 cups water
  • 1 cup sugar
  • 2 tbsp gelatin powder
  • 3/4 cup coconut milk
  • 4 egg whites
    Instructions

  1. Boil the water, sugar and gelatin powder, stirring until sugar and gelatin are dissolved.
  2. Add coconut milk and cool for two hours, stirring occasionally. Don't be tempted to go ahead before it's cool, it doesn't work!
  3. Beat egg whites until firm peaks form, then beat in cooled gelatin mixture.
  4. Pour into a rinsed rectangular tray, refrigerate until firm, cut into squares and serve.
