Phil Vickery's Summer Fruit Mousse


This is the true taste of summer. You can use a mixture of whichever berries you fancy, strawberries, raspberries, blueberries, loganberries.

If you prefer you can use a packet of frozen summer fruits that have become a staple in my freezer.

Vegetarian logo Vegetarian if Vegetarian Gelatine is used.

    Ingredients

  • 450g / 1 lb summer berries
  • 85g / 3oz caster sugar
  • 1 sachet 70g / 2 ½ oz gelatine powder
  • 300ml / ½ pint double cream
  • 200g / 7oz Greek yoghurt
  • Whole berries and bunches of currants to decorate

    Instructions

  1. Puree the berries and mix with the sugar.
  2. Make up the gelatine according to the instructions on the packet.
  3. Whip the cream until fairly stiff but not grainy and mix with the yoghurt.
  4. Stir the gelatine into the fruit and fold in the cream.
  5. Pour into a pretty dish and refrigerate for an hour before serving to allow the gelatine to set.
  6. Decorate with berries before serving.
