Phil Vickery's Summer Fruit Mousse
This is the true taste of summer. You can use a mixture of whichever berries you fancy, strawberries, raspberries, blueberries, loganberries.
If you prefer you can use a packet of frozen summer fruits that have become a staple in my freezer.
Serves 6

Vegetarian if Vegetarian Gelatine is used.
Ingredients
- 450g / 1 lb summer berries
- 85g / 3oz caster sugar
- 1 sachet 70g / 2 ½ oz gelatine powder
- 300ml / ½ pint double cream
- 200g / 7oz Greek yoghurt
- Whole berries and bunches of currants to decorate
Instructions
- Puree the berries and mix with the sugar.
- Make up the gelatine according to the instructions on the packet.
- Whip the cream until fairly stiff but not grainy and mix with the yoghurt.
- Stir the gelatine into the fruit and fold in the cream.
- Pour into a pretty dish and refrigerate for an hour before serving to allow the gelatine to set.
- Decorate with berries before serving.
