Phil Vickery's Ricotta, Orange and Chocolate Tart
This is a rich tart, that is delicious served with good strong coffee at the end of a meal or at tea time.
Serves 6
Contains Dairy, Gluten.
Vegetarian if Vegetarian pastry is used.
Preparation time: 12 mins
Cooking time: 30 mins

250g / 9oz ricotta cheese

Grated rind of an orange
-
85g / 3 oz chopped glacé fruits or candied peel

40g / 1 ½ oz dark chocolate (50% cocoa solid) chopped like chocolate drops

1 egg and 1 egg yolk, beaten

55g / 2oz caster sugar
-
a few drops vanilla essence
-
1 20cm / 8 in ready made sweet pastry case
Instructions

Pre-heat the oven to 190°C/ 375°F/ gas mark 5.

Simply mix all the ingredients together and pour into the pastry case.

Smooth the surface and bake for 30 minutes. Serve warm.
