Sweet Potato Balls

An unusual dessert using sweet potatoes.

    Ingredients

  • 3 pounds sweet potatoes cooked or 2 x 17 ounce cans, drained
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 egg
  • 1 cup miniature marshmallows
  • 1/2 cup ginger snap crumbs

    Instructions

  1. Mash sweet potatoes while they are hot, then add, butter, salt and spices.
  2. Add egg and continue to whip until thoroughly combined.
  3. Chill until firm.
  4. Form into golf ball sized pieces and place 2 to 3 marshmallows in center of each ball.
  5. Roll in ginger snap crumbs.
  6. Place on non-stick or lightly greased baking sheet.
  7. Bake at 400°F for 10 to 15 minutes
