Tomato and Basil Soup
Easy to make and great during the summer.

Ingredients
  • 1 large onion
  • 3 cans chopped tomatoes
  • 2 tbsp basil
  • 1 clove garlic
  • 1 chilli
  • 2 dsp tomato puree
  • vegetable stock cube

    Instructions

  1. Peel, chop and fry the onion.

  2. Add the garlic and chilli and tomato puree.

  3. Add the chopped tomatoes and stock cube.

  4. Add some water (just until it looks a 'soup' consistency). Bring to the boil.

  5. Blend the soup with a hand blender.

  6. Add the basil (to taste) as well as some black pepper

  7. Serve.
