Banana and Coconut Sorbet
This recipe works well with pitted prunes substituted for the banana, very rich but like an ice cream plum pudding, mmmm...

- Ingredients
- 350g peeled ripe banana
- juice 1/2 lemon
- 100ml Sugar syrup
- white rum, to taste
- 300ml coconut cream
- Instructions
- Blend banana and lemon juice in a food processor until smooth.
- Add sugar syrup and rum to taste, then add cream.
- Chill until at least fridge temperature, then churn in an icecream machine, following machine instructions.
