Banana and Coconut Sorbet

This recipe works well with pitted prunes substituted for the banana, very rich but like an ice cream plum pudding, mmmm...

Serves 4

Vegetarian

    Ingredients
  • 350g peeled ripe banana
  • juice 1/2 lemon
  • 100ml Sugar syrup
  • white rum, to taste
  • 300ml coconut cream

    Instructions
  1. Blend banana and lemon juice in a food processor until smooth.
  2. Add sugar syrup and rum to taste, then add cream.
  3. Chill until at least fridge temperature, then churn in an icecream machine, following machine instructions.
