Soup is easy to swallow and very versatile, once you know the basic recipes you can adapt them to use any vegetables that you like. Extra calories can be added by pouring a swirl of cream, fromage frais, yoghurt or sour cream on the top. There is also an easy to swallow version of croutons. Instead of frying squares of bread, blitz a piece of bread in a food processor and then fry the bread crumbs in a pan with a little oil until golden brown. Use different oils like virgin olive oil, walnut or sesame oil for different flavours. Remember to be careful of nut allergies when using specialised oils.
