Carrot and Coriander Soup
Vegetarian
- Ingredients
- 1 large onion
- 4 large carrots (or 2 large tins of carrots)
- 2 tbsp coriander orange juice
- 1 garlic clove
- 1 vegetable stock cube
- 2 dsp tomato puree
- Oil (for frying)
Optional extras: - Add a can of chopped tomatoes
- Add peppers in with the onions
- Add a handful of lentils/ rice (when you add the carrots)
Instructions
- Peel and chop the vegetables.
- Fry the onion in a small amount of oil till soft.
- Add the carrots and garlic, cover them with water (not too much- just enough that they will all cook together). Simmer.
- When the carrots are soft, use a hand blender to puree it all.
- Crumble in the stock cube.
- Add the orange juice and then if needed, some more water (till it looks the consistency you want it). Bring back to a simmer.
- Add the tomato puree and coriander.
- Season to taste and serve.
