Carrot and Coriander Soup


Vegetarian
    Ingredients
  • 1 large onion
  • 4 large carrots (or 2 large tins of carrots)
  • 2 tbsp coriander orange juice
  • 1 garlic clove
  • 1 vegetable stock cube
  • 2 dsp tomato puree
  • Oil (for frying)

    Optional extras:
  • Add a can of chopped tomatoes
  • Add peppers in with the onions
  • Add a handful of lentils/ rice (when you add the carrots)

Instructions
  1. Peel and chop the vegetables.
  2. Fry the onion in a small amount of oil till soft.
  3. Add the carrots and garlic, cover them with water (not too much- just enough that they will all cook together). Simmer.
  4. When the carrots are soft, use a hand blender to puree it all.
  5. Crumble in the stock cube.
  6. Add the orange juice and then if needed, some more water (till it looks the consistency you want it). Bring back to a simmer.
  7. Add the tomato puree and coriander.
  8. Season to taste and serve.
