Carrot and Lentil Soup

- Ingredients
- 1 tbsp oil
- 1 onion sliced
- 1 lb carrots sliced
- 3 oz split red lentils
- 2 pts vegetable stock
- 1 tsp coriander
- 3 tbsp parsley ,chopped
- salt & pepper
- Instructions
- Heat oil, add onion and cook until soft.
- Add carrots and cook for 4-5 minutes.
- Rinse lentils with cold water then add to pan with stock and coriander.
- Bring to boil, lower heat, cover & simmer gently for 30 mins or until lentils are tender.
- Add parsley, salt and pepper and cook for 5 mins.
- Set aside to cool slightly, then pour into a processor and bend until smooth, reheat before serving.
