The Lavender House's Carrot, Orange and Ginger Soup

Serves 4
Vegetarian

    Ingredients
  • 500g carrot
  • 50g fresh chopped root ginger
  • 1 large onion
  • 1 orange
  • 100ml orange juice
  • 1 litre vegetable stock or water

    Instructions
  1. Peel and slice the onion, peel and chop the carrots, cut the orange into chunks.

  2. Gently fry the onion in the butter until softened ensuring that it does not colour.

  3. Add the chopped ginger, cook for another 2 minutes. Add the chopped carrot, and the orange.

  4. Add the vegetable stock and the orange juice. Gently simmer for 30 minutes.

  5. Whizz up in a blender or food processor, pass through a medium strainer. Season and serve.

  6. For added texture and flavour top with a little grated carrots moistened with lemon juice and chopped parsley
