Carrot, Coriander and Raisin Soup

Serves 4

Contains Dairy
Vegetarian if Vegetable stock cube used


Ingredients

  • 2-3 middle size carrots
  • 300 ml hot chicken stock (can be made from stock cube)
  • 1 cup of cream
  • salt and ground pepper
  • 1 tbsp of finely chopped coriander
  • 1 tbsp of raisins
 
Instructions

  1. Clean the carrots and slice them. Steam or boil them.

  2. Mix the cooled carrots, the stock and the cream.

  3. Blitz with a stick blender or in the food processor but be careful of the steam.

  4. Add some salt and pepper and the coriander and the raisins.

  5. Heat and serve.
