Poached Peaches
This recipe can also be done with pears, just swap them for the peaches and use red or white wine.
- Ingredients
- 1 peach per person
- 1/2 liter water
- 1/2 liter white wine
- 1 - 2 vanilla pods split open
- sugar (aprox 1 big hand ful)
- lemon juice
- Instructions
- Put the water, white wine, sugar into a saucepan and bring to simmer.
- When the sugar has desolved add vanilla pods and lemon juice to taste (and a bit more sugar if needed - depends on the wine)
- Reduce this sirup by 1/3 and then add the peeled peaches (you can peel peaches like tomatoes by blanching them quickly in hot water).
- Simmer under lock until very tender (aprox 20 minutes)
- Let cool in the syrup to room temperature.
- Serve with vanilla ice cream, drizzle with syrup and sprinkle with fresh lemon balm or mint.
