Phil Vickery's Ricotta, Orange and Chocolate Tart
This is the true taste of summer. You can use a mixture of whichever berries you fancy , strawberries, raspberries, blueberries, loganberries. If you prefer you can use a packet of frozen summer fruits that have become a staple in my freezer.

Ingredients
- 250g / 9oz ricotta cheese.
- Grated rind of an orange
- 85g / 3 oz chopped glace fruits or candied peel
- 40g / 1 ½ oz dark chocolate (50% cocoa solid), chopped like chocolate drops
- 1 egg and 1 egg yolk, beaten
- 55g / 2oz caster sugar
- a few drops vanilla essence
- 1 20cm / 8 in ready made sweet pastry case
Instructions
- Pre-heat the oven to 190oc/ 375of/ gas mark 5.
- Simply mix all the ingredients together and pour into the pastry case.
- Smooth the surface and bake for 30 minutes. Serve warm.
