Tomato and Orange Sauce
Here is a really loose recipe for a sauce I really like. It comes from a French friend of mine, and we eat it on grilled fish, but I'm sure it would be tasty on other foods. The amounts and forms of the ingredients can be played with, depending upon a person's tastes. Also, you can use fresh, or canned produce, or even juice. I puree it with an immersion

- Ingredients
- 1 medium onion, chopped
- 1 chopped red pepper (preferably the longish, Spanish ones - they're sweeter)
- 1 chopped green courgette (zucchini)
- 1 tin of skinned tomatoes or 4-6 skinned fresh tomatoes, chopped
- 1 clove of garlic
- fresh or dried herbs to taste
- salt
- pepper
- Instructions
- Heat 2 tbsp olive oil in a saucepan.
- Add onion and pepper, fry (but not brown) for 5 mins.
- Add the other ingredients, let it simmer for 10 mins - perhaps longer, until the vegetables are soft.
- Blend in a food processor.

- 1 tbsp olive oil
- 2 red peppers, chopped
- 1 orange, chopped or 100ml orange juice
- 100ml white or red wine
- pinch cayenne pepper
- salt and pepper to taste
- Place all the ingredients in the pan and saute until soft.
- Puree.
