Watercress Soup

Vegetarian if vegetable stock used

Serves 4
    Ingredients
  • 3 bunches of watercress
  • 2 small potatoes
  • 2 small onions
  • 750-800 mls milk
  • 750-800 mls chicken stock
    Instructions
  1. Shred the watercress and wash.

  2. Dice the potatoes and onions.

  3. Saute all the vegetables untill soft in a little butter.

  4. Add about 750-800 ml's of milk and chicken stock.

  5. Bring to the boil.Simmer 10-12 min's.

  6. Pop into a blender.

  7. Return to pan, season to taste and reheat.

  8. Drizzle a little cream on top before serving.
