Watercress Soup
Vegetarian if vegetable stock used

- Ingredients
- 3 bunches of watercress
- 2 small potatoes
- 2 small onions
- 750-800 mls milk
- 750-800 mls chicken stock
- Instructions
- Shred the watercress and wash.
- Dice the potatoes and onions.
- Saute all the vegetables untill soft in a little butter.
- Add about 750-800 ml's of milk and chicken stock.
- Bring to the boil.Simmer 10-12 min's.
- Pop into a blender.
- Return to pan, season to taste and reheat.
- Drizzle a little cream on top before serving.
